Classic Caesar Salad

Crisp romaine, crunchy croutons and a creamy, garlicky parmesan dressing.

  • 2 romaine hearts, chopped
  • 2 cups cubed bread (for croutons)
  • 1/2 cup grated parmesan
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated
  • Olive oil, salt & pepper

Method

  1. Toss bread cubes in olive oil and bake at 200ยฐC for 8โ€“10 minutes until golden.
  2. Whisk mayo, lemon juice, Dijon, garlic and half the parmesan into a dressing.
  3. Loosen with a little water and season to taste.
  4. Toss the romaine with the dressing until well coated.
  5. Top with croutons and the remaining parmesan. Serve at once.
