Easy Vegetable Fried Rice

  • 3 cups cooked, cold rice
  • 2 eggs, beaten
  • 1 cup frozen peas & carrots
  • 3 spring onions, sliced
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Method

  1. Scramble the eggs in a little oil, then set aside.
  2. Stir-fry garlic and vegetables in hot oil for 2–3 minutes.
  3. Add the cold rice, breaking up clumps, and fry 3–4 minutes.
  4. Pour in soy sauce and sesame oil; toss until evenly coated.
  5. Return the egg, add spring onions, and toss through. Serve hot.
