- 200g digestive biscuits, crushed
- 90g melted butter
- 500g cream cheese
- 100g icing sugar
- 200ml whipped cream
- Zest & juice of 2 lemons
Method
- Mix crushed biscuits with melted butter and press into a lined tin.
- Chill the base while making the filling.
- Beat cream cheese, icing sugar, lemon zest and juice until smooth.
- Fold in whipped cream gently to keep it airy.
- Spread over the base and refrigerate at least 4 hours before serving.
