Hearty Beef Stew

  • 800g stewing beef, cubed
  • 2 tbsp flour, seasoned
  • 2 onions, chopped
  • 3 carrots, chunked
  • 3 potatoes, chunked
  • 2 tbsp tomato paste
  • 1 litre beef stock
  • 2 bay leaves, thyme

Method

  1. Toss beef in seasoned flour, then brown in batches in a heavy pot.
  2. Soften onions, stir in tomato paste and cook 1 minute.
  3. Return beef, add stock, bay and thyme; bring to a simmer.
  4. Cover and cook gently for 1.5 hours until beef is tender.
  5. Add carrots and potatoes; simmer 30 more minutes until soft.
  6. Season to taste and serve with crusty bread.
