Fluffy Buttermilk Pancakes

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 3 tbsp melted butter
  • Maple syrup & berries to serve

Method

  1. Whisk flour, sugar, baking powder, baking soda and salt in a bowl.
  2. In another bowl, whisk buttermilk, egg and melted butter.
  3. Pour wet into dry and stir just until combined — lumps are fine, don't overmix.
  4. Heat a lightly buttered pan on medium. Pour 1/4 cup batter per pancake.
  5. Flip when bubbles form on top and edges look set, about 2 minutes.
  6. Cook another minute until golden. Serve with syrup and berries.
